Giant Salad

Ingredients for 4 people

  • 1 head of lettuce
  • 1 bunch of arugula
  • some large green olives
  • 7 ripe Piccadilly tomatoes
  • Pecorino Romano DOP to taste
  • extra virgin olive oil to taste
  • vinegar, salt, pepper to taste


Preparation

Clean and wash carefully the lettuce and arugula, and drain properly in a salad spinner to eliminate all the water. Wash and dry the tomatoes. In a large salad bowl, place the chopped lettuce, arugula, tomato wedges and green olives. Dress with extra virgin oil, a few drops of vinegar, salt, and add pepper if desired. Toss delicately and top with a sprinkling of Pecorino Romano cheese.
