Boil the cabbage in salted water; in another pan, sauté the oil, garlic and chili pepper. Add the chopped cabbage and stir around, adding salt as required. Divide the cabbage into small mounds and arrange the sliced jowl bacon over the piping hot cabbage. Wait for the slices of bacon to heat through and soften, then finish with a dusting of Pecorino Romano DOP cheese.
