Charter
If, on the one hand, product specifications regulate the production process of Pecorino Romano PDO and define its characteristics, the charter defines the regulations on the internal organisation and the general activities of the Consortium for the Protection of Pecorino Romano Cheese.
In addition to the basic tasks of the Consortium and its aims, the document contains the regulations concerning the means of access of members and producers to the “Pecorino Romano system”, their rights and duties, the composition of the governing bodies of the Consortium, their operation and their respective powers and functions.
