Bucatini Amatriciana

Ingredients (for 4 people) 

  • 400 g of bucatini
  • 250 g jowl bacon to taste
  • 6-7 tomatoes
  • 4 extra virgin olive oil
  • chilli pepper to taste
  • 60 g of grated Pecorino Romano DOP
  • salt to taste


While the pasta is cooking, put some olive oil in a frying pan with a little chilli pepper and the jowl bacon. While it browns, add some white wine and let it evaporate until the mixture has reduced a little.
At this point, add the tomato and continue to cook on a low heat.
Stir the pasta into the sauce, adding the grated Pecorino Romano gradually.
